Imagine coming home knowing that it's Butter Chicken, Seafood Marinara or maybe a steak rubbed with our delicious steak seasoning and a little salad for dinner, that should put a smile on everyone's face.'
We have taken the plunge and bought a Scanpan pressure cooker, l have to admit l was a bit scared after some of the horror stories of dinner ending up on the ceiling !!
Well let me reassure you, it was easy...we bought 5 kilos of diced chuck steak from our favourite butcher and made up 2.5 kilos of Beef Vindaloo and 2.5 kilos of Beef Madras. The prep was easy and we followed the recipe until the 2nd lot of onions went in then put the lid on and when the pressure was achieved we set the timer for 25 minutes and voila! it was cooked. We finished off the Madras with the tomatoes and natural yoghurt and a squeeze of lemon and then into large containers in the fridge. Next day we filled up rectangular takeaway containers and our freezer is full of ready to go meals..
We have frozen the Butter Chicken and even with the cream it still was great when re-heated although the secret is to use the stove top not microwave and add a touch of cream before serving.
We have to make up the basmati rice and some pilau rice to add to the freezer, they only take 4 minutes in the microwave from frozen on full power.
At night we will decide "what's for dinner" and put a takeaway curry pack in the fridge and when we get home we will heat it in a saucepan, gently, and put the rice in the microwave, add some mint to natural yoghurt and a serve of mango chutney, maybe cook a couple of pappadoms and we will have a feast.
